Summer Potatoes With Courgettes and Red Peppers

These summer potatoes are filled with fresh, seasonal produce and are a really easy summer lunch or light dinner. They are even great made in advance for a picnic or packed lunch with a difference.  For a more filling dinner, add a fried or poached egg!

To Make Summer Potatoes:

  • 2 large potatoes (use your favourite variety)
  • 1 red onion
  • 1 zucchini (small)
  • 1/2 red pepper
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 pinch salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika

Pre heat the oven to 200ºc

Peel the potatoes and dice into 1 inch cubes

Dice the onion, courgette, red pepper and garlic and add along with the potatoes to an oven dish

Cover with 2tbsp of olive oil

Season with the salt, pepper, turmeric and paprika and stir well to coat all the ingredients

Roast in the oven for 25 minutes before giving the pan a shake. Return to the oven for a further 15-20 minutes untill golden.
